Supposedly booting off the OS X install CD and using Disk Utility
from there to rebuild the mirror works, but I haven't tried such.
Sounds like both you and the OP was trying to manipulate the boot
drive (not necessarily volume) that contained the RAID. To prevent
issues Disk Utility apparently won't let you manipulate the drive
since it could result in changing the partition scheme and drivers
underneath you. You need to be booted off another drive. (Not just
volume.)

Actually, I wasn't working with the boot drive, but rather 2 other drives.
