Typing "ps aux | grep mysql" returns:

MySQL is not running.

I also noticed that typing "mysql" returns "-bash: mysql: command not found"
is it normal?

No.

Try running this...

sudo find / -name mysql

What are the results? (give it time to search your machine)

I should be running Mac OS X Server...

should be? :)

I even tried "sudo SystemStarter stop MySQL" and "sudo SystemStarter start MySQL" but nothing changes...

Any further idea?

What version of mysql is installed? Did you update your MySQL as well as the PHP?

The mysql admin app is in /Applications/Server/ on OSX Server. Try launching mysql from there. Look in the system.log for any errors.
