What you are seeing there is Augmented records (AKA The Cylinder of
Destiny) in action.

1. Setup in a workgroup config and bind to your older OD system. AD
works too.
2. Open Server Preferences and import the users and groups you want.
3. Now you can edit those users as if they existed on that server to
enable 10.5 services.

Is there a way to do this manually for an advanced setup?

You can create the augments by hand and they should work. It's a PITA though. This is the single biggest reason to do the training wheel configs as you don't get the GUI otherwise.

Right, but I can see a problem where you do the training wheel, need to move
to advanced, then have to manually add someone later.

You should never need to move to advanced though since you can open SA and WGM as needed.

Time Machine might be an issue though as it only knows how to deal with services that are configured in SP.
