Though not a problem experienced with server - I did see problems with the version of Disk Utility that's shipped with the 10.5 Client DVD, I was unable to create a RAID (mirror), sorry that I don't recall all the details now - BUT doing the exact same steps from Tiger gave no problems.

So I expect the version of disk utility to be the same on the client as well as the server DVD and that might be the root of your problem(!)
