AD environment suggestions

We are primarily a Windows 2007 Server with AD accounts facility.  Our numbers of Mac users are growing at an alarming rate.  We have an OSX Server running 10.5.3 using the OD and AD magic triangle to manage AD user permissions and such.  All AD accounts have an Exchange email account and are running office 2008 with Entourage.

Questions:

• Is there anyone  who has a similar setup and if so, how do you go about imaging machines so that they are all identical?  Are you leaving them unbound before imaging the machines and binding them manually after?
  

• Is anyone using scripts to auto setup their email accounts in Entourage?
  

I really would like to find a way to automate the whole setup process and just handout the imaged systems.  When the user first starts up the system, it can be bound to the domain and the users email already setup in entourage.  

Any suggestions?  I would love to hear what others are doing in this type of scenario.
