I can't give you a recommendation, since, ordinarily I would recommend the
8139 based cards.  But to get a list of whats supported out of the box,
navigate to:

/System/Library/Extensions/IONetworkingFamily.kext/Contents/Plugins

You'll get the following plugins/extensions that support the following
chipsets:

Apple_DEC21x4Ethernet.kext
AppleYukon2.kext
Apple3Com3C90x.kext
AppleBCM5701Ethernet.kext
AppleGMACEthernet.kext
AppleIntel8254XEthernet.kext
AppleIntel8255x.kext
AppleRTL8139Ethernet.kext
AppleRTL8169Ethernet.kext
AppleUSBEthernet.kext
AppleUSBGigEthernet.kext
AppleYukon.kext

I would guess that finding a 3COM3c90x based or Intel 8254 or 8255 based
card should be easy, and relatively inexpensive.  In addition, it looks like
the USB Ethernet adapter from the MacBook Air should work as well (but I
can't confirm that).

This list is from Mac OS X 10.5.2 9C31 client.  I don't know if it differs
on server, but I doubt it.
