First, Apple doesn't write the IMAP software, it's FOSS,
specifically Cyrus from Carnegie Mellon. So if there's a problem
with it, which there isn't, then yes, Apple isn't the party
responsible.

If Apple chooses an open source solution to provide IMAP functionality
and rolls it into a $999.00 software package and calls it Mac OS X
Server, they're the party responsible for Cyrus' proper operation from
the perspective of the licensee of Mac OS X Server, not CMU.
That said, finding disk space "leaks" is one of the easiest system
administration tasks and almost certainly not the fault of Apple (or
Cyrus).
du -s * is your friend.
