I simply edited out the references to cyrus, from the postfix
master.cf & main.cf, since I simply want the mail to go *out*, via the
postfix alias I configured.
Taking cyrus out of the loop got me a step further, though still not
(on Leopard Server anyway) reliably sending the emails when periodic
is fired via launchd.
Periodic fires properly, and (since I have it configured this way)
logs to /var/log/, but no email.
There's some info in syslog:

whih indicates it's trying to sed the email and failing. Though I
haven't figured out how to fix it yet; looks like launchd is failing
to fire up postfix (via its sendmail interface), but why?
It works fine on Leopard (client, not server) and when I compare
configs I see no smoking guns yet.
