Hi Aaron,
There is no exhaustive list that I know but here is something:
-On a job that has not ran the postflight script (e.g. a failed job) look in the Working folder for a properties.plist file there you will find different property/values. A good way to reveal those is to create workflows with Podcast Composer submit them, fail the job and go have a look at the properties.plist
-You can create your own *dynamic* custom properties using the userRequirements block of the template.plist in your workflow bundle.
-You can create your own custom properties in Server Admin/Podcast Producer
Also look in the archives of this list this is where I found the 2 first answers provided in my email, the 3rd one is in the official Apple documentation.
