Hi,
The typical reason those items are disabled and unavailable is because
the PDF document you are printing in Preview is encrypted and therefore
has various permissions associated with it. However, this should not
carry over to other documents in Preview (unless they are also
encrypted) or to other applications.
I wonder if you've created a preset that has inadvertently captured
this setting. Please check whether this might be the case.
If it turns out to be a preset problem OR it turns out that you can
continue to reproduce this with other apps besides Preview, please file
a bug. If it is a preset problem, supply your presets file
(~/Library/Preferences/com.apple.print.custompresets.plist) with your
bug report so we can investigate it.
