I made a new batch of settings last week while printing some password
protected PDF files from Preview. I wouldn't have expected that to
disable Preview and Save as PDF for all applications however....

(~/Library/Preferences/com.apple.print.custompresets.plist) with your
bug report so we can investigate it.
