I did in fact have my settings to "Last Printer Used". I will just choose a default printer instead which will work fine.

When I do that, the GUI Prefs panel is instantly updated after performing the lpoptions command just like he said.

He didn't know I had that setting enabled, and I didn't know he didn't, typical crossed wires.
