Interpolation interpolates between a start numerical value to an end numerical value over a period of time. This interpolation is done using a curve (linear, quadratic, cubic...) which you can visualize in the Settings pane of the Inspector. The curve kind of controls the speed of change.

I second the fact you should have a look at Interpolation Modes.qtz
