AFAIK, the only documentation available is the official Core Image documentation, of which you're certainly aware:

I have the impression it has been improved lately, the filter descriptions are now slightly more precise. Apart from that, I'm aware of at least the following code sample from Apple which makes use of the CIColourCube filter:

I realise this is outside of Quartz Composer but as far as I know there isn't a seperate CoreImage dev list and this seems to be the best place to get core image answers.

Core Image questions are usually asked (and sometimes even answered :) on the quartz-dev mailing list:
