Would is it not possible to have a Quartz composition span multiple
screens? (I would find out for myself if I had the hardware) What if
it's resolution was set to the total resolution of all the screens?
Would the rendering load be too much? This would avoid having to
control seperate Player applications.

Yes, you can have a composition span multiple screens if those screens are driven from the same video card (note that you might not be able to cover the entire screen surface though). However, the QC editor cannot really do that: it does not have a multiple full-screen render mode. You will typically need a custom cocoa app.
