"You might have to use a customized version of the Player sample code in /Developer/Examples/Quartz Composer. The only thing to change I think is the constant kCGDirectMainDisplay to the proper display ID of the screen you want the app to render to. Then you launch 3 copies of the app."
Would is it not possible to have a Quartz composition span multiple screens? (I would find out for myself if I had the hardware) What if it's resolution was set to the total resolution of all the screens? Would the rendering load be too much? This would avoid having to control seperate Player applications.
