It's not in the documentation, but In QCCompositionParameterView.h, you'll find that QCCompositionParameterViewDelegate has:

- (void) compositionParameterView:(QCCompositionParameterView*)parameterView didChangeParameterWithKey:(NSString*)portKey

Works great.
