Is there a way to dump the overall UTI database to a text file so I can see all the registered UTis with
their extensions? Is there a way to unregister the UTI for the disk image?

I don't know of any way to unregister the existing .img UTI, but you can dump the LS database with lsregister:


/System/Library/Frameworks/CoreServices.framework/Versions/A/ Frameworks/LaunchServices.framework/Versions/A/Support/lsregister -dump
