My point is that you will sometimes have to choose between a page that
validates without errors or warnings, and a page that works in the browsers
you're targeting.

This might be a going time to point out the difference between theory and
practice, then. As one example, you can note that <embed> has never been
valid HTML, but that it's worked just fine for many years.
You could also use this opportunity to show your audience how to deliver
well-formed and valid XHTML to browsers that support <object> by using PHP
or other scripting languages. Or, you could show them how you can can use
internal DTD subsets in order to "trick" validators into seeing <embed>
tags as valid.
