The should not be any compatiblity issues using the QuickTime Player. As long as users have the QuickTime Player that can view your content. For example, If you want users to movies you've encoded using the Sorenson 3 codec they will need to have at least QuickTime 5 installed on their computer because the Sorenson 3 codec is not in QuickTime Player 4. Likewise if you enocode movies using the MPEG4 codec users will need at least QuickTime Player 6. For your other question I agree with Carlos. I use the codecs he suggested. Once you figure out the bit rates you want to encode at post another message if you still need help.
