Apple has some information on their site, but there is relatively little information specific to QT. I'm sure others can offer a few links here and there.

Ben Waggoner has a book on compression where he talks about QT codecs and streaming.

Checking the list archives as well as those from the streaming server users list may yield some valuable information.

In the mean time shoot your questions to the list. Other people will be able to reply regardless if the question is basic or complex.
