Apple has some information on their site, but there is relatively
little information specific to QT.  I'm sure others can offer a few
links here and there.


I remember I learned a lot from just reading Sorenson's manuals:

There is a lot of useful general info in the Sorenson Video and Sorenson Broadcaster manuals.

Ben Waggoner has a book on compression where he talks about QT codecs
and streaming.
