Luke, You need an application that can deinterlace movies (my app JES Deinterlacer deinterlaces at reasonable quality). Then just export the picture from the movie using QT Player Pro. Come to think of it, this would make a nice new feature for my app. You can also do a vertical blur in PhotoShop until any flicker goes away. If you make a slideshow of your menu pictures and burn that on a test DVD you can check if objectionable flicker occurs in any of them.
