Naturally a 640x480 .m2v will look different next to a 720x480 DV file. Try filming a known circle and see which of the two looks more circular on a computer screen. You can open the .m2v and change its size to 720x480 if you like, but that won't change the original data. If you do that, both the .m2v and DV will show a circle as being an oval.

Spruce may be misinterpreting whether the file is square pixels or not. I know people who use Spruce, I'll ask what their experience is like.

Back to your original needs, I think, which is to have one set of filming and use it for DVD-Video and for computer use only. It needs to be 640x480 to look right on a computer (it can also be at 720x540, but that kind of scaling is more likely to produce artifacts as fields get mixed up). I'm only talking about for NTSC when I say these figures.

If you're worried about the scaling of the 720 to 640 being done by QuickTime, you could always run it through After Effects to get better quality scaling. Once you have a 640x480 sized movie you might well then compress it with something other than MPEG-2. Sorenson 3 or MPEG-4 for example.
