With QuickTime 7.0.3, the following script will do the trick:

tell application "QuickTime Player"
    -- assuming the first open movie is the one you desire to export:
    export movie 1 to "My volume:My iTunes export.mov" as iTunes
end tell

Is there some way to script specifically for an iPod or do I have to
script a mp4 export and do the settings myself?
