MPEG-4 with H.264 or Quicktime Format with MPEG-4: what the...?

Hello out there. I'm a newcomer to video editing and compression - and I'm confused. Any help would be greatly appreciated or if you could direct me to a useful web site where I may find a guide - particularly about codec compression options - I would very much appreciate it.

I have a number of movies in DV format. These are VERY large files and I simply haven't got enough room so I would like to compress them in the best manner possible given the quality/file size trade-off. Do I want to choose MPEG-4 format with the H.264 codec, or do I want QuickTime format with the MPEG-4 codec, or Quicktime format with the H.264 codec? What's the best for storing onto a DVD to show to future generations? What about frame rates - what is the minimum or maximum you would recommend, and is there a value above which the result is not discernible to the human eye?

Is data rate an issue if you don't want to publish films on the web? If I simply want to store my films on DVD, should I ignore Data Rate?

One other thing, saving a file into H.264 on my G5 iMac 2ghz takes absolutely ages. It takes about 40-45 minutes to convert a 1gb dv file to h.264. Is that par for the course, or has my computer got a cold? I know that frame rates, and image size are a factor, but are their any export time bench marks given certain settings for the codecs?

Cheers
Martin
