beside of all this is there a  " Gui version" of streaming segmenter in lion server ?
or does a simple grafical live streaming tool like Quicktime broadcaster not exist anymore ?

I believe the tools are already installed on Lion, they are just command line. I know it is included with 10.6. Just type man mediastreamsegmenter into a terminal window for the manual.
