I got a device called the Digimate III that holds 2.5" drives for $50. It has its own little LCD touchscreen. It works great and doubles as a portable drive. It will be easy to make an airtight case for it with places where I can press down through the case to operate the controls.
In 1989 I visited a friend in Ann Arbor who was working as the computer technician for the Chemistry department at the Univerisy of Michigan. The day he took me to work with him he was servicing a hard drive on one of the Sun workstations there that was the size of a washing machine that had an "amazing" capacity of 10 MEGABYTES! This little device that fits in the side pocket of my camera case and is independent of a computer holds 16,000 times as much data as that washing machine size device of only 18 years ago! The digimate is designed so it is completely easy to swap out the drive too, and came with about 20 extra screws in case I lose them in swapping drives (I think the guy I ordered it from might have slipped in extras because I told him where I was going and why I would be swapping drives a lot.) So I can bring two 160 gig 2.5s and have 320 gigs of storage in the side pocket of my camera case! Or the equivalent of 32,000 of those washing machine size devices that were so awesome! in 1989 (Really I will have another trekker or one of my porters carry one of the 2.5s and I will carry the other and they will be redundant.)
