California trip and pano opportunity

I'm going to a conference in San Luis Obispo in late April, and - if all goes to plan - I'll be taking a leisurely solo drive down the coast road(s) from San Francisco when I arrive in California. I'll be setting off in the late afternoon on Saturday 21st, aiming to stay over somewhere and getting to San Luis Obispo sometime (any time really) on Sunday.

I'll be stopping wherever seems appropriate to take photos and panos... hence this message. (And the reason why it isn't totally off-topic!)

I'd really appreciate suggestions for places to stop off to take panoramas. I won't be with anyone so I can just please myself, no hassles. And I don't have to be in San Luis Obispo until Sunday evening if I like.

So, what iconic vistas or hidden gems should I aim for on the way down? Are there particular times of day when I should be at certain places to find them at their best?
