Only thing you can do is be careful with unsharp mask. And this goes both with Quicktime and flash or some of the other viewers.
I prefer to get a smooth panning than the very jerky I got in your. Even a flashpanorama at the higher setting pans much smoother.
Remember that it is processor dependable and any other processes you have open will affect it.
And by the way also using Previews makes it worse.
