In addition to setting the security logout in the standard OS security pane,
you have several 3rd party tools that allow additional options for
auto-logouts as well.

We use a combination of the security option under Mac OS 10.3 to manage
"safe" logouts after varying times between 15-45 minutes (depending on
room/area) as well as a standardized "nuclear" logout option (via the great
LogoutAE app) after 60 minutes on all public Macs.
Being as we can manage the standard Mac OS "safe" logouts from the Workgroup
Manager on 10.3 Server, this allows both easy customization for standard
user logouts AND a backup/forced logout option across our entire campus.
