You can change this by poking the CUPS config.

It looks like /etc/cups/printers.conf is the relevant file -- it's a simple pseudo-XML file that specifies a list of <Printer ...>s and one <DefaultPrinter ...>.

My guess that you could get away with pushing around your own copy of this file with the corrected default setting.

If this doesn't do the right thing, check out the CUPS documentation -- there's miles of it. You may be able to access this right off your own computer by going to <http://localhost:631/documentation.html>. If that doesn't work, try <http://www.cups.org/documentation.php>, or the list of man pages that that document refers to.
