Try this on one machine first (on one line):

defaults write com.apple.LaunchServices LSHandlers -array-add "<dict><key>LSHandlerContentType</key><string>com.microsoft.word.doc</ string><key>LSHandlerRoleAll</key><string>com.microsoft.word</ string></dict>"

This should be done for all users (Use "Current console user on target computer" in ARD). I'm not sure if it will work if you send it out as root, since a setting in the users own com.apple.Launchservices.plist will override it.

Now log out the user and log in again and see if it works. Then you can send it out to all users, but as I wrote you have to do this for all users. Perhaps it should be added as a login-script if you use managed clients or you could set all the correct associations on you computer and push out the plist with ARD or trough Workgroup Manager.
