The audio channel from iTunes to the AirPort Express is encrypted (to
prevent interception of DRM-protected music?) as mentioned in this
article:

You would probably need to get some kind of a license from Apple to use
it. At least one vendor of music server products has licensed the
protocol so far (sorry, but I can't remember the name. It's not the
Squeezebox, but one of its competitors.)
I don't work on AirPort Express or AirTunes; I'm just letting you know
what I've read...
