I downloaded the fink commander source (CVS) and rebuilt it.  It fixes some of the problems with it.  There are a few others.  gnuplot 3.8j is on the stable build list.  You do need to update the packages using the selfupdate feature of fink.  For those who want it, I can make this updated fink commander available.

Gnuplot is not an unknown package, in fact I just built the package, while writing this email!

AquaTerm works very well with gnuplot if you want to avoid launching the X11 Server.
