I have some programs that produce tabular data and it would be nice to be able to run them through the Numbers program in some way and
use Numbers to format the output in a nice way.

I've not tried it myself, but it's a sure thing that AppleScript/Events and Automator will be supported. Hence, the simplest way to interface with your own program is to have it put its results files into a 'watched' folder.

Alternatively you can generate and handle apple events from your own program, this has the potential to yield much better performance. It also has the potential to take a lot of time if you are not familiar with how to do it already.
