  This isn't a problem with NFS. There is known bug in the Workgroup Manager tool that doesn't allow specification of quota's greater than 2 GB (this is for Workgroup Manager/Tiger Server combo's). You can still set the quotas using the command line and those will be set and honored correctly. Check out the man page for edquota.

  To my knowledge, this has been fixed in Mac OS X Leopard and the new Workgroup Manager tools.
