Hello Konrad, I'm not sure if I properly understood everything, because my answers would be embarrasingly simple. Still, in case they are the correct ones, let me have a try.
If you're well satisfied with X11, then why not use that on MacOSX? I believe X11 doesn't come installed as standard with OSX, but the DVD that comes with your Macs has an optional installer for X11. Also, you can download it from Apples website. If you want a full desktop projection option instead of just a couple of x-wondows you may want to try Apples Remote Desktop. The client is installed on every MacOS machine. I don't know if this would fix your French keyboard problem.
