latexdiff, combined with an svn (or cvs *** Aack! Thbbbt! ***)
version archive of your files works very nicely.

I have taken part in many grant writing sessions, some lasting months, some only days, and we very successfully use LaTeX with a repository. It happened to be cvs, but I highly recommend using Subversion (svn) instead.

Usually not a big problem with small latex documents, but just keep in mind you cannot easily purge a file from a SVN repository: http:// subversion.tigris.org/issues/show_bug.cgi?id=516
Especially when you work with inexperienced users uploading huge files by mistake, it IS a problem, no matter the size of the project.
