The new kernel seems to have fixed the problem - we've tested from multiple servers with multiple clients (some have run over 14 hours at this point) and the problem has not reappeared.
Thanks to Billy Brown and John Murata for their suggestions.
FYI, I did a "strings eepro100.o" and it looks like the file eepro100.c was unchanged between the kernel versions, so the bug looks like it was not specific to the eepro100 driver.
