Hardware encoding to a stream

Does anyone have any experience using a hardware encoding card and sending the output from the card to either Quicktime or Darwin streaming server? I need to take an s-video or composite signal and stream it live (and archive it) using QTSS. I need it to be VERY simple for a user to set-up (plug it in an turn it on, maybe press a button and you are streaming). We're trying to develop a mobile streaming solution for class rooms here at SFSU. Currently we send the signal over the campus cable to a couple of Broadcaster stations in a central location. But not every classroom is capable of sending signal via cable. They all have ethernet, though.

Any suggestions?

Thanks!

Jason
