The easiest way is to edit your relayconfig.xml file (to remove, or enable/disable a particular relay), write the relayconfig.xml file back to disk, and then in the Terminal using something like 'ps -aux' locate the QuickTime Streaming Server child process (not the lowered-number parent, but the higher number PID of the child). Lastly, to make this active running QTSS child process re-read the relay config file and for your changes to the XML file to go into effect, simply send a SIGHUP to the QTSS child process.
