Binding Quicktime Streaming to a NIC

I keep hearing the advice that I should bind the quicktime streaming to another NIC so that I can use HTTP instead of RTSP when running on the same computer as my web server. The people that tell me this never know how its done.

Im running MacOS 10.2 Server on an XServe. If anyone knows how to bind Quicktime to a different port please let me know.
