Dual streams, archiving?

Hello all. We're currently running a high-quality high bit-rate signal through our Mac G5 to the net. However, I'm getting complaints from our listeners who don't have broadband. They want a less-dense signal that would be optimized for their 28-56 connections. It seems to me that the box should be able to handle two different streams of the same content, but I'm at a loss for how to proceed (PC guy, all thumbs on the PC, all toes on the MAC!). We'd also like to archive our programs in one hour increments for the listeners' convenience. Is anyone doing something like this? How are you setting up?
