To answer my own question, and thus appear foolish to have asked it:

I've made a bit of progress on this and think I can finish it up on my
own.  The -framework compiler flags needs to be conditionally set in the
right places deep in the bowels of the icecast-specific autoconf m4
routines.  Since I both like and understand autotools about as much as I
do Easy Cheese, this was not immediately apparent.

Since several hours spent on Google brought up so much webpage
indicating good strategies for accomplishing this, I will try to put a
page together somewhere when I finish this up.
