USB Video : First Steps

We are just starting out looking into developing Mac
OS X drivers for our family of composite USB
Video/Audio capture devices (webcams, PC TVs, etc),
until now supported only on Windows.

I have written Windows video and audio drivers for
these devices but have no Mac experience. It is not
our our intention to try to write these drivers from
scratch; we will be hiring an experienced contractor
to develop a vendor specific video driver for us but I
will be the main liason and ultimately will have to
understand these drivers.

Since I only got my hands on a Mac for the first time
last week I will be starting off with very basic
questions relating to PnP and USB. I apologize in
advance for using Windows analogies in my questions
but at the moment that is my only frame of reference.

What component (if any) in Mac OS X is the equivalent
of the Windows Device Manager, where I can see a list
of all installed drivers and optionally choose to
remove or update drivers. In particular we have USB
Class Compliant Audio on our composite device but in
some applications of our product we need to override
the class driver with our own vendor-specific driver.

The device appears on the System
Preferences->Sound->Input page (as "Unknown USB Audio
Device" when I plug it in) but I see no way to specify
that I want to replace the driver with a vendor
specific driver.
