Windows has what I would call a "user-configured" driver matching system.
Mac OS X has an automated driver matching system based on weighted scores.
The developer of a driver assigns the scoring for specific pieces of hardware,
so that each user is not forced to select the appropriate driver for each
piece of hardware. As a developer, you can alter the scores without even
writing a code-based driver.
Barry already answered your questions about how to determine what the system
is up to in the absence of an appropriate driver. Fortunately, only developers
should ever need to dig into that sort of information.
