I have had great luck using the Ellisys USB Tracker 110 hardware device. It isn't too expensive, is small and gets the job done. I have no connection to Ellisys, just a customer, but this little device recently helped me track down a queueing problem that would have been difficult without it. It showed the data actually flowing between the host and the device, exclusive of software driver effect. Even if you were to modify the USB stack, I can't see how you could get all the packets that the controller puts on the bus (think isoch).
