There is a driver on Mac OS X that works with most class compliant USB audio devices.  It’s called AppleUSBAudio.kext.  The driver itself isn’t fully class compliant because it doesn’t support every possible feature in the USB audio class (because some features aren’t implemented at the higher levels of Mac OS X, for example), but most devices don’t implement the features it doesn’t support, so for most people it’s not an issue.

There is a Mass storage USB class driver as well as a HID class driver (for keyboard and mouse, etc).  I don’t know if Mac OS X has any other class drivers (like comm or video, etc).  There are lots of classes in the Device Working Group, but not all of them directly apply to Apple hardware or its customers.

I don’t know where you would get a detailed listing of what’s supported by Mac OS X’s class drivers.  Did you have a specific device in mind?  It’s usually best to ask specific questions on mailing lists like this.  The more general your question, the less likely you are to get an answer because (it seems) no one wants to take the time to enumerate all the possible answers to a very general question.
