You are probably running Tiger, Jens is on Panther. On Tiger, X11.app has xkb disabled by default. There were instructions on the list a while ago how to turn it on (basically: Rename the "X11" executable inside /Applications/Utilities/X11.app/Contents/MacOS to something like "X11R6" and create an executable script named "X11" in its place that contains the two lines
#!/bin/sh
/Applications/Utilities/X11.app/Contents/MacOS/X11R6 +kb "$@"
)


This will make that X11.app runs with the xkb extension enabled as it used to on Panther, but it doesn't imply that setxkbmap will work. I haven't tried, but I wouldn't be surprised if it didn't work; keyboard handling in Apple's X11 is 'different'.
