To clarify are you wanting to:

1) Boot with darwin now & use X11 windowing without Aqua. As in do you have Darwin installed as well? If not moot point. If so, then are you wanting to use X11R6.8 exclusively as your GUI?

or

2) Go ahead and boot Mac OS X but use your own X11 windowing packaging (X11R6.8 from the fink xorg pkg) on top of that. As in, did you mean to say you don't want to use Apple's X11 instead of saying you don't want to use OS X?

I'm asssuming you actually mean to do #2. First check out fink's FAQ:
http://fink.sourceforge.net/faq/comp-packages.php?phpLang=en#cant- install-xfree
in regards to using an X windowing system other than Apple's own X11.


Next, if you get an error message trying that then send it to one of fink's mailing lists, probably the beginner's list to start as well as the particular pkg maintainer:
http://fink.sourceforge.net/lists/fink-beginners.php
To get the pkg maintainer's email (xorg in this case) the type the following in you Terminal window or xterm window:
fink info xorg


Seems more logical to send the request on how to use fink installed packages to a fink list instead of to a list for the program you don't want to use. Unless I'm really misunderstanding what you're wanting to do.
